With the Super Bowl approaching this weekend, every family has their own staple foods. From wings to chips and dip, these foods are an iconic part of a true Super-Bowl Sunday. Here are a few of my own recipes perfect for this coming weekend or anytime they seem to fit the vibe!
Guacamole
A classic favorite for any super bowl party (or any party for that matter)
Ingredients (Serves 4-5)
- The flesh of 4 Ripe Avocados
- Juice of One Lime
- Salt and Pepper, To Taste
- Half of a Red or White Onion, finely diced
- One Jalapeno, finely diced and Deseeded
- ½ a bunch of Cilantro, finely diced
Instructions
- Combine the avocado, lime juice, and a pinch of salt to a large mixing bowl
- Mash the mixture into a dip as smooth or as chunky as preferred
- Mix in the remaining ingredients and season to taste
- Serve with tortilla chips and enjoy!
Peri Peri Wings
A classic Superbowl wing with a west African twist!
Ingredients (Serves 4)
- 3 tablespoons olive oil
- 2 teaspoons chilli flakes
- 6 cloves of crushed garlic
- Juice of 2 limes
- 3 teaspoons smoked paprika
- 3 teaspoons Turkish oregano
- ½ teaspoon of salt (to taste)
- 2 pounds of chicken wings
Instructions
- Preheat the oven to 425 F or grill to high heat.
- Mix ingredients (aside from the wings) to create the marinade.
- Thoroughly coat the wings in the marinade.
- Cover and marinate for one hour in the fridge and up to 12 hours.
- Place the wings on the grill or on a non-stick roasting tray, well spread apart.
- Bake wings for 20 minutes or grill for 10 minutes until char on both sides.
- Serve and enjoy!
Sikil Pak
A classic Mexican household dip to love during the game.
Ingredients (Serves 4)
- 2 cup of pre roasted pumpkin seeds
- 4 red tomatoes
- ½ red or white onion, finely diced
- ½ bunch of cilantro, finely diced
- 1 garlic clove
- Salt and pepper to taste
Instructions
- In a small pot, boil the tomatoes for 10 minutes till soft and the skin begins to peel
- In a food processor, blend the pumpkin seeds until uniformly ground into a fine powder
- Add the boiled tomatoes and blend again until a spreadable paste forms
- Transfer into serving dish and add remaining ingredients and season to taste
- Serve with tortilla chips and enjoy!
Sliders
A classic American burger that anyone will enjoy
Ingredients (Serves 4)
- 1 Pound of 80/20 Ground Beef
- Salt and Pepper, To Taste
- 4 Potato or brioche buns
- 4 Slices of circle cut, red onion
- 4 leaf’s of iceberg lettuce
- 4 dill pickle spears cut into slices
- ½ cup of Mayonnaise
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Ketchup
- 1 Teaspoon Pickle Brine from Pickle Jar
- ½ Teaspoon Smoked Paprika
Instructions
- Combine mayonnaise, Dijon mustard, ketchup, pickle brine, and paprika, and taste to adjust and create burger sauce.
- Divide the ground beef into 4 equal balls, ¼ of a pound each
- In a cast iron pan, heat the pan to medium-high heat with a thin layer of vegetable oil.
- Season the ball of meat and smash down into a pan with the flat side of the spatula to create a thin burger patty of even thickness.
- Once the juices of the burger start to surface, about 2-3 minutes, firmly scrape the burger from the bottom of the pan and flip.
- Once juices start to surface on this side of the patty, remove from the pan and set aside.
- Turning the heat of the pan to low, place the buns in the pan to toast the buns in the remaining burger juices, about one minute.
- On a serving place, place a bottom bun, a spoonful of burger sauce, a leaf of lettuce, a slice of onion, the slices of pickle, the burger patty, and the top bun with an additional spoonful of the burger sauce.
- Serve hot and enjoy!
Korean fried chicken
The Korean take on popcorn chicken is addicting at parties.
Ingredients (Serves 4)
- 2 pounds of chicken thighs
- ½ tsp salt
- 1 ½ cups of flour
- 1 tablespoon garlic powder
- 1 tsp paprika
- 1 tsp baking powder
- ¼ cup cornstarch
- 1 litre of vegetable oil for frying
- 2 tbsp gojuchang paste (A Korean chile paste that can be found at most grocery stores)
- 2 tbsp honey
- 4 tbsp brown sugar
- 4 tbsp soy sauce
- 2 cloves of garlic, grated
- 2 tsp minced ginger
Instructions
- In a small saucepan, combine grouchang, honey, brown sugar, soy sauce, garlic, and ginger and whisk to combine
- Simmer the sauce for 5 minutes until thickened then set aside
- Cut your chicken into 1 inch, bite sized cubes
- Combine the flour and spices into a bowl
- Dredge chicken in the flour mixture until fully coated and tap off any excess
- Heat a large pot of oil to maintain a temperature of 375f
- Fry chicken in 2-3 batches for 6-8 minutes until fully cooked and golden brown.
- Combine fried chicken in bowl and pour over sauce and toss to fully coat the chicken
- Serve hot and enjoy!
